Moist carrot & date muffins!!

Recipe carrot & date muffins

Ingredients

3 cups finely grated carrots

1 cup pitted and chopped dates

1 cup whole wheat flour or multi grain flour(I used multi grain flour)

1 cup unbleached all purpose flour

2 large eggs

1/2 cup light brown sugar (you can use raw organic sugar ,coconut sugar or any sugar or honey or any sweetner you like,also you can add more date paste as a sweetner.)

1/2 cup canola oil or veg or coconut oil (I used canola oil)

1tbsp baking soda(try to use aluminum free baking soda,aluminum  is not good for health)

1tbsp baking powder ( try to use aluminum free baking powder )

1tsp cinnamon powder

Pinch of nutmeg powder(optional if you like you can add,I did not added)

Pinch of salt (optional)

1/2 cup chopped walnuts or pecans (optional)

Chopped nuts or almond slices for decoration

Instruction

Pre heat oven to 350°F.In a bowl cover dates with enough water to just cover the dates,let soak for 1 hour,drain the dates cut and remove the seeds,chop the dates,  take half of the chopped dates or 1/2 cup chopped dates in a blender (a small blender jar will be easy to use)add 2 tbsp water to make thick paste.In a large bowl take grated carrots,sugar,eggs,oil,date paste mix all ingredients very well,in another bowl take whole wheat flour, all purpose flour,baking soda,baking powder,cinnamon powder, salt,chopped nuts,chopped dates mix all together and add to the carrot mixture and mix very well.Now line muffin tin with paperliner or sillicon liner, pour the muffin mixture and fill 3/4 of it,this much muffin batter should fill 10 to 12 muffins.Decorate with some almond slices or with any chopped nuts.Bake for 25 minutes, check after 20 minutes,take a toothpick insert in the center of any of the muffins, if toothpick comes out clean your muffins are ready,if not bake for another 5 to 10 minutes.Turn off the oven ,take out and let them cool down.Enjoy  these delicious moist muffins with a cup of tea or coffee , or with a glass of milk in the morning as breakfast or decorate with some cream cheese or caramel frosting and enjoy as a dessert!IMG_20150528_143405
